Quality of butter fat and technological properties of milk depending on cows breed and season of year

Abstract

Influence of year season for chemical compound and technological properties of milk of Bestuzhevskay and Black-motley breeds cows is studied. It is established that the best raw materials for butterl manufacture is milk of Bestuzhevskay breeds cows received in the fall-winter period.
