In the course of the work, the nutritional, energy and enzymatic value of the studied product was evaluated; contribution to providing the body with unsaturated fatty acids. An analysis was also made of domestic and foreign literature regarding the effect of palm oil on public health, quality of life and the development of noncommunicable diseases caused by the use of this product in food. The results of the study proved the effectiveness of the luminoscopy method in assessing the quality of fat-containing products and showed that the technology of luminoscopic analysis can be promising.palm oilfatty acidsluminescence analysissurrogateatherogenicsfood qualityпальмовое масложирные кислотылюминоскопический анализсуррогататерогенностькачество пищи[1.
