Abstract

Enteric bacteria as a sanitarian-indicative criterion of milk products microflora are characterized. Sources and ways of milk products contamination, possibilities to reduce contamination, behavior of coli bacteria in fermented milk products, effects on milk products quality, methods of control and other issues are outlined in the article.
