Method and device for removing adherent powder from the inner surface of the spray dryer were developed with the aim to improve capacity and safe operation. For this purpose when hot air and product are not delivered to the camera the device installed on the inspection door is set in operating position. After that a tube is put forward into the drying chamber. Stop valve is opened and exhaust ventilation is switched on. Due to the air stream powerful whirl movement of air and dry powder mixture occurs inside the drying chamber that provides an abrasive effect and clean the walls of the chamber. Comparing analysis of complete nucleotide successions of the genes 16S pPHK of closely related subspecies of the industrial strains Lactococcus lactis applied as starter cultures for fermented milk products manufacturing was made. Possibility to apply the method for identification of two subspecies of Lactococcus lactis: cremoris and lactis was shown. Existence of unique replacements in the proximal area of the gene 16S pPHK subspacies cremoris has been demosntated that allows precisely identify the cultures L.lactis subsp: cremoris and L. lactis subsp. lactis.
