Resumo
In 2016 a new intergovernmental standard GOST 33923-2016 «Composite canned milks with sugar. Technical regulation» has been worked out that includes requirements to the six types of canned products: milk and cream concentrated with sugar and coffee, cacao, chicory. Organoleptic, physical-chemical indices and requirements to the safety of the products are given as well as characteristics of the milk and non-milk raw materials applied, analysis of the normative base in comparison with earlier valid documents, the order of preparation and addition of taste flavors for their guaranteed quantity in the finished products. Requirements to the quantity and quality of sugar intended to be used for canned products are added such as «sugar value» and list of the existing standards for sugar. Attention has been paid to the introduction of some points that additionally allow to detect falsified products.
