Resumo

The methodology for the study of stable oxygen 18O/ 16O isotopes in natural milk and dairy products was developed. This methodology includes methods for the isotope ratio measurement by the mass spectrometry (IRMS/SIRA), which has high sensitivity and reliability, and for the interpretation of the results of measurements. The methodology was first applied to obtain experimental data on biological fractionation of stable oxygen 18O/ 16O isotopes in the natural milk from cows kept in cowshed or free grazing cows. The results of the scientific work are the basis for development of standard method for the determination of stable oxygen 18O/ 16O isotopes in the milk and dairy products. The method will detect natural milk and dairy products that do not match the declared name «Drinking Milk», and refer to the products category «Milk Drink» / «Reconstituted milk».
