Identification of milk and dairy product from reconstituted dried milk. Method of isotopic mass spectrometry (IRMS/SIRA)
Abstract
The methodology for the study of stable oxygen 18O/ 16O isotopes in natural milk and dairy products was developed. This methodology includes methods for the isotope ratio measurement by the mass spectrometry (IRMS/SIRA), which has high sensitivity and reliability, and for the interpretation of the results of measurements. The methodology was first applied to obtain experimental data on biological fractionation of stable oxygen 18O/ 16O isotopes in the natural milk from cows kept in cowshed or free grazing cows. The results of the scientific work are the basis for development of standard method for the determination of stable oxygen 18O/ 16O isotopes in the milk and dairy products. The method will detect natural milk and dairy products that do not match the declared name «Drinking Milk», and refer to the products category «Milk Drink» / «Reconstituted milk».

Identification of fat phase of sour cream by GLC method
Abstract
Fat phase of the random samples of sour cream taken in retail shops in Irkutsk was identified. Capillary gasliquid chromatography method was used to study fatty acids composition. It was established that fatty acids compositions of five samples of sour cream completely comply with that of milk fat. This confirms name of the product declared and its natural character.

Vegetable raw materials of Vietnam in milk products
Abstract
Product containing milk and added flour received from the special bean called mung that is widely spread in Vietnam was developed. Milk-vegetable models with different levels of vegetable component were found and rational recipe of the product containing milk was determined.
