Somatic cells count in milk effects such characteristics as raw milk grade, its technological suitability, animal health. Investigations made by domestic and foreign scientists related with correlation and effects of mechanism of mastitis disease on somatic cells count and enzymes activity are evaluated. Ferments activity influences biological value, organoleptic indices and technological suitability of milk.
