Methods of goat milk identification

Abstract

Possibilities to determine animal of the origin of cow and goat milks with application of the electrophoresis methods in the native and denaturating conditions as well as methods of high efficient GLC are discussed. Results of the analysis of goat, cow and human milks as well as their mixtures are given. It is shown that application of the above mentioned methods gives possibilities to detect admixtures of cow milk in goat milk. This will result in detection of falsification of milk products manufactured on the basis of goat milk
