Resumo

Existing legislation base does not allow to establish criteria of assessment and to determine identification indices of raw milk. At the Laboratory of the Technical and Chemical Control of the All-Russia Dairy Research Institute (VNIMI) the amendment to the standard GOST R 52054-2003 «Raw cow milk. TU» is being prepared that will make requirements to the raw milk of the highest grade more strict and to the changes of protein and its composition.
