Abstract

Food protein ingredients allowed to be applied in dietetic nutrition were worked out and tested in the Department of baby foods and preventive nutrition of the All-Russian Research Institute of Fats. Technologies for receiving fermented drinks, ice-cream, bakery, confectionary, other products with soy-milk concentrate were developed.
