Аннотация
Existing legislation base does not allow to establish criteria of assessment and to determine identification indices of raw milk. At the Laboratory of the Technical and Chemical Control of the All-Russia Dairy Research Institute (VNIMI) the amendment to the standard GOST R 52054-2003 «Raw cow milk. TU» is being prepared that will make requirements to the raw milk of the highest grade more strict and to the changes of protein and its composition.

Analysis of the world and domestic production of lactose, export, import and markets was made. Physical-chemical, organoleptic and microbiological characteristics of the food and pharmaceutical lactose are given and compared. Technologies of the classic lactose with application of the innovative membrane and adsorption processes are discussed.

Concentrated composite canned milks with sugar
Аннотация
In 2016 a new intergovernmental standard GOST 33923-2016 «Composite canned milks with sugar. Technical regulation» has been worked out that includes requirements to the six types of canned products: milk and cream concentrated with sugar and coffee, cacao, chicory. Organoleptic, physical-chemical indices and requirements to the safety of the products are given as well as characteristics of the milk and non-milk raw materials applied, analysis of the normative base in comparison with earlier valid documents, the order of preparation and addition of taste flavors for their guaranteed quantity in the finished products. Requirements to the quantity and quality of sugar intended to be used for canned products are added such as «sugar value» and list of the existing standards for sugar. Attention has been paid to the introduction of some points that additionally allow to detect falsified products.
