addition of sugar or other sweetening agents that have not been
mentioned in other places or have not included»; code 35.01

The article informs about development of the special fat composition of the milk based product intended for gerodietetic nutrition. The authors
have developed fat composition using computer modeling that resulted
in receiving the fat component with highly balanced composition
suitable for gerodietetic products.

Heat stability and activity of water at milk concentrating by membrane
methods for canned milks production have been studied. The method
for determining heat stability of the concentrated milk mixtures
according to the value of specific heat conductivity has been offered.

Application of buttermilk concentrate for fermented products manufacturing
Resumo
Changes of composition and properties of buttermilk at concentrating
by reverse osmosis have been studied. It was established that lactic
acid process is going on more intensively when butter milk concentrate
is inoculated with traditional yogurt starter. The curd received is more
viscous and is more resistant against syneresis.

Analysis of publications and recommendations are given concerning
reconstruction of the nano-structure of soils contaminated with oil in terms of artificial symbiosis of lactic acid bacteria with microflora
oxidating carbohydrate with application of the organic material
fermented by milk whey, warms and agro-technical measures.
