Foreign economic activity in the domestic dairy market is given on the basis of information «Customs statistics of the foreign trade of RF» for the period 2005-2009: code 04.04 «Milk whey, concentrated or non-concentrated, with or without addition of sugar and other sweetening
agents; products from the natural milk components, with or without
addition of sugar or other sweetening agents that have not been
mentioned in other places or have not included»; code 35.01
«Caseins, caseinates and other casein derivatives; glue from casein».

The article informs about development of the special fat composition of the milk based product intended for gerodietetic nutrition. The authors
have developed fat composition using computer modeling that resulted
in receiving the fat component with highly balanced composition

Heat stability and activity of water at milk concentrating by membrane
methods for canned milks production have been studied. The method
for determining heat stability of the concentrated milk mixtures
according to the value of specific heat conductivity has been offered.

Application of buttermilk concentrate for fermented products manufacturing
Abstract
Changes of composition and properties of buttermilk at concentrating
by reverse osmosis have been studied. It was established that lactic
acid process is going on more intensively when butter milk concentrate
is inoculated with traditional yogurt starter. The curd received is more
viscous and is more resistant against syneresis.
