International seminar in Yaroslavl
Abstract
The International seminar for the specialists of the dairy sector took place on November 19-22 in Yaroslavl. The seminar was organized by the consultative-information center «Molinform» together with the Yaroslavl State Institute of Raw Materials and Foods Quality. The subjects topical for the dairy specialists were discussed: legislations and standards in the dairy sector of the RF and the Customs Union, control of milk and milk products quality, methods of detection and falsification, existing biomembrane methods of milk raw materials processing.

In the article influence of lactulose on the properties of composition for fermented ice cream production is considered. Addition of lactulose positively effects structural-mechanical properties of the mixture, improves curds viscosity and stability as well viability of starter culture microflora.

New poly-component fermented milk product
Abstract
New fermented milk product was developed. Application of the extruded oat flour in the composition of the fermented substrate and components ratio were substantiated. Starter cultures were chosen and their efficiency was proved. It was found that required complex of organoleptic, physical-chemical, technological and rheological indices were achieved in the product.
