Binary systems on the xanthan basis: effects of konjac
Abstract
Existing knowledge about behaviour of konjac and xanthan in the complex systems has been improved. Possibility to increase efficiency of the technological application of the given binary system, to forecast results of application of the mixture «konjac-xanthan» depending on their ratio, type of the hydration medium and succession of ingredients introduction has been proved.

Directed hydrolysis of milkproteins
Abstract
Special features of the directed hydrolysis of casein by proteolytic enzymes have been studied. Trypsin and chymotrypsin are the most specific for obtaining hydrolisates with high degree of proteins splitting, and for obtaining hydrolisates with medium degree of hydrolysis it is advisable to apply thermolysin. Molecular mass distribution of peptides has been defined. Dynamics of accumulation of free amino acids in the course of the hydrolysis has been studied.
