Abstract
Results of the study of milk drying in the thin layer of drying plant with application of electric fields are given. The study has confirmed two times reduction of the drying process duration, and expenditure of the additional energy for electric field creation is much lower than the energy needed for the phase transfer of water in steam. The authors offer to up-grade drum dryer on the basis of the laboratory drum drier for milk. Quality of the milk powder complies with the appropriate requirements.

Principle regularities of the effects of the physical-chemical properties of the milk-protein concentrates on the ability to form foam at gas saturation in the rotor-pulsating plants have been studied. For getting stable gas-liquid dispersion system with lowest density it is advisable to change pH of the samples towards acid side.
